    Squeaks' Blueberry Crumble Pie

    List of Ingredients




    6 cups blueberries; rinsed and picked over
    2 teaspoons cornstarch
    1/2-2/3 cup sugar
    1/2 teaspoon ground Cinnamon
    1 teaspoon vanilla extract
    1 recipe pie dough
    1 1/4 cups all purpose unbleached flour
    1 1/2 cups light brown sugar; unpacked
    1/2 cup Butter; cut into pieces

    Preheat oven to 425°F.

    Combine blueberries, cornstarch, sugar, cinnamon and extract, mixing well.
    Let set 2+ hours to macerate.

    Make pie dough, fitting into a 9" glass pie dish. Fold the edges under all
    around the rim and crimp.

    In a food processor bowl, mix the flour and brown sugar. Add the butter
    and pulse several times until well combined. Bake at 425 °F for 10 mins.
    Reduce heat to 375°F continue baking for an additional 25 - 35 minutes or
    until golden brown on top.

    Serve warm with schoop of vanilla ice cream.
