    Savannah red rice and chicken


    List of Ingredients


    • 2 teaspoons olive oil
    • 1/2 cup chopped sweet green peppers
    • 1 teaspoon minced garlic
    • 1 can (15 oz.) reduced-fat chicken broth
    • 1 cup medium-grain rice
    • 1 can (14 1/2 oz.) stewed tomatoes
    • 1/2 dried thyme
    • 8 chicken drumsticks, skinned


    Instructions


    1. Heat oil in a nonstick skelet, then add peppers and garlic; stir-fry one minute.
    2. Stir in broth, rice, tomatoes and thyme.
    3. Bring to a boil; stir.
    4. Add drumsticks and return to a boil.
    5. Cover and cook over low heat until chicken is cooked through and rice is tender. About 20-25 minutes.


    Final Comments


    Don't peek at the rice while it's cooking. Every time you lift the saucepan lid, condensation forms and drips onto the rice. The result: sticky, soggy rice.
