Beef Fajtas
List of Ingredients
- 1 1/2# beef flank steak
- 1 onion, sliced
- 1 green pepper, cut into strips
- 1 red pepper, cut into strips
- 1 jalapeno pepper, chopped
- 1 Tablespoon cilantro
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1teaspoon ground cumin
- 1 teaspoon ground coriander
- bit of salt
- 8 ounce can chopped tomatoes
- flour tortillas
- Toppings of choice.... sour cream, guacamole, shredded cheddar cheese, salsa, black olives....
Instructions
- Cut flank steak into stips.
- In crock-pot add all ingredients.
- Cook 8-10 hours on low.
- Remove meat from crock-pot, shred and return to crock-pot.
- Serve with tortillas and toppings.
