List of Ingredients 3/4# bulk pork sausage 1 large cooking apple, peeled and cored 1 cup plus 1 tablespoon all-purpose flour 2 eggs 2 1/2 cups milk 1 1/2 cups sliced onions 1 tablespoon butter Instructions Place the sausage in a bowl. Grate in the apple. Work the ingredients together and form into 16 small balls. Make a batter from the cup of flour, the eggs, and 1 1/4 cups of milk. Spray non-stick spray into 4 1 1/4-cup individual ramekin dishes (I use bowls) and heat in a preheated oven at 425 degrees until hot. Divide the sausage balls among the dishes and cook in the oven for 10 minutes. Pour the batter over the sausage balls and return to the oven for 35-40 minutes or until risen and golden. Meanwhile, place onion and remaining milk in saucepan, bring to boil and cook until the onion is soft. To make the sauce, melt the butter, stir in remaining flour and cook gently for one minute, stirring. Remove the pan from the heat and gradually stir in the onions and milk. Bring to a boil and continue to cook, stirring, until the sauce thickens, and then season to taste. When the popovers are baked, turnthem out onto warmed serving plates and pour a little onion sauce into the center of each. Serve immediately.
