    Vermicelli with Italian-Style Sauce

    This dish is quick and easy.


    List of Ingredients


    • 3/4# pork tenderloin, cut into thin 2-inch long strips
    • 1/2 onion, thinly sliced
    • 1 can (14 1/2 oz) low sodium stewed tomatoes, chopped
    • 1 cup sliced mushrooms
    • 1/4 cup low-sodium tomatoe paste
    • 1/4 cup water
    • 1 teaspoon dried Italian seasoning
    • 1/2 teaspoon coarsely ground black pepper
    • 8 oz. vermicelli


    Instructions


    1. Coat a skillet with nonstick spray.
    2. Warm it over medium heat for one minute.
    3. Add pork and onions.
    4. Cook, stirring frequently, until onions are tender and pork loses its pink color, about four minutes.
    5. Stir in tomatoes, mushrooms, tomatoe paste, water, Italian seasoning, sugar and pepper.
    6. Bring to boil.
    7. Reduce heat to low.
    8. Cover and simmer, stirring occasionally for ten minutes.
    9. If desired, uncover during the last few minutes of cooking to thicken sauce.
    10. Cook vermicelli.
    11. Serve sauce over vermicelli.

    I must have gotten this one out of one of those low-fat cookbook/magazines.
