    One-Pan Potatoes and Chicken Sante Fe


    List of Ingredients


    • 4 medium potatoes, cut into 3/4-inch cubes and microwaved 8-10 minutes until tender
    • 1# boned and skinned chicken breast, cut into 3/4-inchcubes
    • 2Tablespoon olive oil
    • 1 cup prepared tomatoe salsa
    • 1 small can whole kernal corn; drained


    Instructions


    1. While potatoes cook, in large skillet toss and brown chicken in oil over high heat for 5 minutes.
    2. Add potatoes.
    3. Saute and toss until potatoes are lightly browned.
    4. Add salsa and corn.
    5. Toss until heated through.
