One-Pan Potatoes and Chicken Sante Fe
List of Ingredients
- 4 medium potatoes, cut into 3/4-inch cubes and microwaved 8-10 minutes until tender
- 1# boned and skinned chicken breast, cut into 3/4-inchcubes
- 2Tablespoon olive oil
- 1 cup prepared tomatoe salsa
- 1 small can whole kernal corn; drained
Instructions
- While potatoes cook, in large skillet toss and brown chicken in oil over high heat for 5 minutes.
- Add potatoes.
- Saute and toss until potatoes are lightly browned.
- Add salsa and corn.
- Toss until heated through.
