This was so good. Makes your house smell like cumin for the evening though.
List of Ingredients
1 (3-Pound) roasting chicken
1/4 cup honey
1-1/2 tablespoons grated orange rind
1 tablespoon ground cumin
1/4 teaspoon salt
1 garlic clove, minced (I used more)
1/8 teaspoon black pepper
Instructions
Heat oven to 400.
Remove and discard giblets from chicken.
Starting at neck cavity, loosen skin from breast and drumsticks by nserting fingers, gently pushing between skin and meat.
Combine honey and remaining ingredients. Rub honey mixture under loosened skin and over breast and drumsticks. Lift wing tips up and over back; tuck under chicken.
Place chicken breast side up, on a foil-lined broiler pan. Pierce skin several times with a meat fork.
Bake for 30 minutes; cover loosely with foil.
Bake an additional 40 minutes or until meat thermometer registers 180 degrees.
