    Pasta and Bean Soup


    List of Ingredients


    • 1 tablespoon oil
    • 1 cup chopped onions
    • 1 cup chopped celery
    • 1/2 cup chopped carrot
    • 2 garlic cloves, minced
    • 3 (14 1/2oz.) cans Great Northern Beans, drained
    • 1 (14.5 oz.) can diced, peeled tomatoes, undrained
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 1/2 teaspoon pepper
    • 3 oz. (3/4 cup) uncooked small shell macaroni
    • 4 oz. (1 cup) shredded swiss cheese
    • 1/4 cup chopped fresh parsley


    Instructions


    1. Heat oil in Dutch oven over medium heat until hot.

    2. Add onions, celery, carrot and garlic.

    3. Cook and stir 4 minutes.

    4. Add broth, beans, tomatoes, oregano, basil, and pepper.

    5. Bring to boil.

    6. Add macaroni.

    7. Reduce heat to medium.

    8. Cook 10-13 minutes or until macaroni and vegetables are tender.

    9. Sprinkle each serving with cheese and parsley.
