    Sassy Potatoe Corn Chowder

    Greg absolutely LOVES this Soup.


    List of Ingredients


    • 4 slices bacon
    • 3 cups cubed peeled potatoes
    • 1 can (13 1/2 oz) chicken broth or 1 1/2 cups boiling water mixed with 2 chicken bouillon cubes
    • 1 package (10 oz.) frozen corn, thawed, drained
    • 1/2 cup each chopped onion and sliced celery
    • 2 tablespoons flour
    • 1/2 cup MIRACLE WHIP or MIRACLE WHIP LIGHT
    • 2 cups milk


    Instructions


    1. Cook bacon in large saucepan until crisp. Drain fat.
    2. Stir in potatoes, broth, corn, onion and celery. Bring to boil. Reduce heat to low; simmer 15 minutes or until potatoes are tender.
    3. Mix flour and MIRACLE WHIP. Stir in milk. Add to potatoe mixture. Continue cooking 3-5 minutes or until thoroughly heated.
    4. Sprinkle with additional bacon and parsley, if desired.


    Final Comments


    Again, I have been known to use Hellman's.
