Apple Squares
List of Ingredients
2 1/2 cups flour
1 tsp salt
1 cup shortening
1 egg yolk
1/2 cup milk (approx. see below)
1 cup crushed cornflakes
5 - 8 apples
3/4 cup sugar
1 tsp cinnamon
1 egg white
1 1/2 cups icing sugar
2 Tbsp waterRecipe
Combine flour and salt. Cut in shortening until texture of fine
crumbs. Beat yolk in glass measuring cup. Add enough milk to measure
barely 2/3 cup. Pour milk mixture over crumbs, working in with a
fork. Finally, work with hands to form a smooth ball. Cut in half.
On lightly-floured surface, roll half the pastry to fit a jelly roll pan,
with sides, about 10"x14". Slide pastry into pan, supporting with rolling
pin. This is not difficult, as pastry is very pliable!
Sprinkle crushed cornflakes evenly over the pastry. Peel, core and slice
apples thinly. Arrange over cornflakes. Mix sugar and cinnamon together
and sprinkle over apples.
Roll remaining pastry to fit top. Lay over apples, cutting off excess
pastry at sides. Do not seal edges or cut air holes in top! Brush slightly
beaten egg white over surface.
Bake in preheated 400 degree oven for 45 - 50 minutes, or till
golden. Cool on wire rack.
Mix icing sugar and water till smooth. Drizzle over top. Cut into
serving-size pieces.
