COCONUT PUDDING
List of Ingredients
4 eggs
4 Tbs unsalted butter at room temperature
1 cup sugar
1/2 cup self-rising flour
1/4 tsp salt
2 cups (500 ml) milk
1 cup shredded unsweetened coconut
1 tsp vanilla extractRecipe
Combine all ingredients in an electric blender or food processor and
blend just until thoroughly mixed. Pour into a buttered pie pan and
bake in a preheated 350F (180C) oven for 1 hour. Allow to cool and
serve chilled or at room temperature. Serves 4 to 6.
