    Microwave Peanut Brittle

    A word of warning. Do not use a plastic container for this recipe even if it says it is microwave safe. It will melt. Use pyrex or some kind of glass bowl that will withstand high temperatures.

    List of Ingredients




    1 cup granulated sugar
    1/8 teaspoon salt
    1 cup peanuts
    1/2 cup white corn syrup
    1 teaspoon butter
    1 teaspoon vanilla
    1 teaspoon baking soda

    Recipe



    Mix sugar, salt and syrup and cook uncovered in the microwave on HIGH for 4 minutes. (Use a deep microwave dish.) Stir and add peanuts; cook on HIGH for 4 more minutes. Add butter and vanilla and stir into mixture. Cook for 2 more minutes on HIGH. Remove from microwave and add baking soda. Stir quickly until mixture turns a darker colour. Pour immediately onto a "greased" cookie sheet. Spread with 2 forks. Let cool and harden, then break into pieces.
