MEATLOAF MUFFINS

List of Ingredients
1-1/2 pounds of ground beef
1-1/4 cups finely chopped onion
1 cup breadcrumbs
2/3 cup ketchup
Splash of Tabasco
Splash of Worcestershire sauce
2/3 cup finely chopped fresh parsley
3 large eggs, lightly beaten
1/2 teaspoon ground thyme
1 teaspoon salt
1/2 teaspoon ground black pepperRecipe
Preheat oven to 350º F. Combine all ingredients in a large bowl. Knead the mixture with your hands until everything is well blended. Do not over mix. Using a large-size muffin tin, fill the muffin tin with the meat loaf mix, molding each one with an ice cream scoop to give it a muffin shape. Bake for 35 to 45 minutes. During the last ten minutes of cooking, brush the tops with barbecue sauce to help create a delicious-looking glaze.
Note: This recipe may be substituted using chicken or turkey.
