    1 pound bulk sausage
    1 cup butter
    1-1/3 cups chopped onion
    1-1/4 cups chopped celery
    16 cups soft bread crumbs
    1 cup chicken stock
    1 Tablespoon salt
    1/2 teaspoon pepper
    1 Tablespoon poultry seasoning
    2 Tablespoons chopped parsley
    4 ounces mushrooms, canned, sliced

    Brown and drain sausage in large saucepan. Add remaining ingredients and stir gently until bread crumbs are moist. Makes enough for a 12 pound bird. Can also be baked in a greased casserole dish.
