    6 cups cold water
    1 cup celery leaves
    2 sprigs parsley
    1 large onion, sliced
    1 large carrot, sliced
    2 teaspoons salt
    3 peppercorns
    1 bay leaf
    1 teaspoon poultry seasoning

    Recipe



    Break apart turkey or chicken carcass and place in large kettle along with skin and trimmings. Add all other ingredients. Bring to boil, cover, reduce heat and simmer for 3 hours. Remove bones. Strain through fine sieve or cheesecloth in a colander. Cool quickly and refrigerate. Remove fat. Add frozen vegetables and leftover turkey.
