    Quick Lemon Squares

    Source of Recipe

    Company's Coming (Rush Hour Recipes)

    List of Ingredients

    36 whole graham crackers

    Filling:
11 ounce can sweetened condensed milk
2/3 cup freshly squeezed lemon juice

    Lemon Glaze:
2 Tablespoons freshly squeezed lemon juice
    1 cup Icing (confectioners') sugar

1 Tablespoon Milk (or semi-sweet) chocolate chips

    Recipe

Lightly dampen an 8 x 8-inch) pan with water to hold waxed paper in place. Line with waxed or parchment paper, cut to fit. Fit 9 graham crackers on bottom of pan.
Filling: Stir condensed milk and lemon juice together in small bowl until thick and smooth. Makes 1-2/3 cups filling. Spoon generous 1/2 cup filling over graham crackers. Spread evenly. Repeat with remaining crackers and filling, beginning and ending with cracker layers.
Lemon Glaze: Slowly stir lemon juice, 1 teaspoon at a time, into icing sugar in small dish until a barely pourable consistency. Carefully spread over top cracker layer.
Put chocolate chips into 1 corner of small resealable freezer bag. Press air out and seal. Immerse corner of bag in small cup of hot water for about 3 minutes. Mash chocolate chips until smooth using fingers. Immerse in hot water again if necessary until chocolate is completely melted. Push melted chocolate down into 1 corner of bag. Snip off small piece of corner. Squeeze chocolate in thin zigzags over glaze. Cover. Chill for at least 10 hours or overnight until crackers are softened. Cuts into 36 squares.
