    Real Ketchup without the candy factor


    List of Ingredients


    • 1/2 peck tomatoes
    • 3 red peppers
    • 2 med onions, minced fine
    • 2 tbsp salt
    • 1/3 cup sugar
    • 2 cups vinegar
    • 2 tsp celery salt
    • 2 tsp ground mustard
    • 1 tbsp whole spice
    • 1 tbsp cloves
    • 1 tbsp cinnamon
    • 1 tsp paprika


    Instructions


    1. Cook tomatoes, peppers and onions together without adding water. Press through a strainer and measure pulp.
    2. To pulp [4 qts] add salt, sugar, spices. Place whole spices in a bag for cooking and remove bag before placing in jars. Ground spices, except paprika, will darken catchup. Long slow cooking also gives a dark color.
    3. Cook ingredients together, except vinegar, rapidly for 1 hour, add vinegar and cook until mix is thick.
    4. Seal in clean hot jars
    5. Should be bright red in color.
