    2 lb pork tenderloin or boneless loin roast
    2 large eggs
    ¼ cup milk
    Salt and pepper to taste
    2 cups Italian seasoned breadcrumbs or crushed saltine cracker crumbs

    Slice meat into ½” rounds. Place each round between 2 sheets of plastic wrap and pound until each piece is ¼” thick. Mix eggs and milk in a wide bowl. Pour breadcrumbs into a pie plate. Dip each pounded meat piece into the egg/milk mixture and allow to drain for a moment and then dip the meat into the bread or cracker crumbs, coating meat on each side. Add salt and pepper to taste.

    Place breaded meat onto a wire rack and let stand for 30 minutes so the coating will adhere to the meat. Place the meat into your air fryer and spray with non-silicone vegetable cooking spray or oil of your choice. Air-fry at 400° for 10 minutes, turn the meat, spray the 2nd side with oil, and continue cooking at 400° for an additional 5 minutes or until both sides are crisp. Serve on a bun with your choice of condiments.
