    3 cups all-purpose flour
    1/2 teaspoon salt
    1 teaspoon ground nutmeg
    1 teaspoon ground cinnamon
    1 cup butter (2 sticks), softened
    1 cup sugar
    2 large eggs
    2 teaspoons baking soda
    2 Tablespoon hot water
    2 cups mashed bananas
    1 cup chopped walnuts, optional

    Preheat oven to 350 degrees F.
    Spray, or generously grease two (2), 9" X 5" X 3" loaf pan with vegetable spray or butter.
    In a medium bowl, blend flour, salt, nutmeg and cinnamon together. Set aside.
    In a medium mixing bowl, beat butter and sugar together until light and fluffy. Add eggs one at a time and mix again, scraping bowl as needed.
    Dissolve baking soda in hot water. Add to the mashed bananas, and blend together with the butter and sugar.
    Fold in the dry ingredients and blend well. Add walnuts if desired.
    Divide batter equally into the prepared pans. Bake at 350 degrees for 50-60 minutes or until knife comes out clean.
    Remove from oven and cool in pans for 5 minutes. Gently turn out onto cooling rack and cool completely before slicing.
    Yields 2 banana breads, 10-12 slices each.
