Buttery Rich Crackers

1 egg, beaten
1/3 cup milk
1 1/2 cups flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup butter
coarse salt, toasted sesame seed, or poppy seed
Recipe
Combine beaten egg and milk. Set aside. In a large mixing bowl, stir
together flour, sugar, baking powder and salt. Cut in butter until
mixture resembles coarse crumbs. Make a well in the center and pour in
milk mixture. Using a fork, stir until the mixture can be gathered
into a ball.
Turn dough out onto a lightly floured surface. Knead gently 10 to 12
strokes. Roll into a 9-inch square. Brush off excess flour. Fold dough
into thirds to form a 9 x 3-inch rectangle. Repeat rolling into a
9-inch square and folding in thirds 3 more times. Divide dough in
half.
Roll each half of the dough into a 12-inch square. Using a pastry
wheel or sharp knife, cut dough into 1 1/2-inch squares or cut out
into rounds with a biscuit cutter. Place on ungreased baking sheet.
Prick with fork Lightly brush crackers with water and sprinkle with
coarse salt, toasted sesame seed or poppy seed.
Bake in a 300 degree oven for 20 to 25 minutes or until done. Remove
crackers from the baking sheet and cool on wire rack. Makes about 96
crackers.
