Cheesy Potato Skins

List of Ingredients
4 large potatoes, about 2 pounds
2 tablespoons melted butter
1 cup shredded Cheddar cheese OR Colby-Monterey Jack Cheese
1/2 cup sour cream
1/2 cup sliced green onions, about 5 medium
Recipe
Bake potatoes. Let stand until cool enough to handle. Cut potatoes
lengthwise into fourths; carefully scoop out pulp, leaving 1/4-inch
shells. Save potato pulp for another use.
Set oven control to Broil.
Place potato shells, skin side down, on rack in broiler pan. Brush with
butter.
Broil tops 4 to 5 inches from heat 8 to 10 minutes or until crisp and
brown. Sprinkle with cheese over shells. Broil about 30 seconds or
until cheese is melted. Serve hot with sour cream and onions.
