    Crabmeat Stuffed Mushrooms

    12 large fresh mushrooms -- stem and reserve
    6 tablespoons butter
    1 cup finely chopped yellow onion
    1 tablespoon flour
    1/2 cup crabmeat
    2 tablespoons sherry
    1 tablespoon chopped fresh parsley
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/2 cup cornflake crumbs

    Preheat oven to 350F.

    Wash mushrooms and dry on paper towels. Place mushroom caps, top side
    down,
    on a well-greased baking pan. Finely chop mushroom stems. In 3
    tablespoons
    butter, saute onion until golden, about 5 minutes. Add stems and cook
    5
    minutes. Stir in flour, crabmeat, sherry, parsley, salt and pepper.
    Saute
    2 to 3 minutes, stirring gently. Remove from heat and stuff mushroom
    caps
    with crabmeat mixture. Sprinkle with corn flake crumbs and dot each
    cap
    with a pat of remaining butter. Bake 20 minutes. Serve immediately.
