~~~Herb Spread~~~
1 pkg. (12 oz.) whipped cream cheese
1/4 cup chopped fresh parsley
2 TB minced fresh dill
2 green onions, chopped
1/8 tsp. salt
1/8 tsp. ground black pepper
~~~Tortilla Roll-Ups~~~
8 flour tortillas
8 hearts of romaine leaves
1 small zucchini, julienned
1 red pepper, halved, seeded and julienned
1 yellow pepper, halved, seeded and julienned
2 small carrots, peeled and julienned
~~~Other Appetizers~~~
10 Belgian endive leaves
12 cherry tomatoes, cored and hollowed out
l small cucumber, sliced
Fresh dill sprigs and chopped green onions, for garnish
Recipe
~~~To Make the Tortilla Roll-Ups~~~
1. In a medium bowl, combine cream cheese, parsley, dill, green
onions, salt
and pepper. Lightly spread some cream cheese mixture over the
tortillas.
Layer romaine leaves, zucchini, some pepper strips and carrots on half
the
tortilla top.
2. Roll the filled tortillas up tightly. Wrap the roll-up tightly in
plastic
wrap and refrigerate for an hour. Slice the tortillas, on an angle,
into
1-inch strips.
~~~To Make the Other Appetizers~~~
1. Using a pastry bag fitted with a star tip, pipe some cream cheese
mixture
into endive leaves; arrange remaining pepper strips on top. Garnish
with dill
sprigs.
2. Pipe remaining cream cheese mixture into cherry tomatoes and on top
of
cucumber slices. Garnish tomatoes with dill sprigs and cucumbers with
chopped
green onions.
~~~Arranging the Party Tray~~~
1. Arrange the tortilla slices, endive and cucumbers around the serving
tray,
overlapping pieces within each grouping. Fill in open spaces with
filled
tomatoes.
