List of Ingredients
3 large avocados, halved, pitted and peeled
1/2 cup chopped red onion
3/4 cup chopped cilantro
1/2 sweet red pepper, finely chopped
1 small tomato, finely chopped
2 T. fresh lime juice
2 T. olive oil
1 jalapeno chile, minced
1/2 t. dried Mexican oregano
1 2/ t. minced fresh garlic
Salt
Pepper
Tortilla chips
Recipe
Mash avocados coarsely in large mixing bowl with back of spoon. Add
onion,
cilantro, red pepper, tomato, lime juice, olive oil, jalapeno chile,
oregano
and garlic. Mix well. Season to taste with salt and pepper and dash
more
dried oregano and garlic, if needed. Cover and chill up to 3 hours.
Serve
with tortilla chips. Makes 4 cups dip or about 16 servings
