How to make Almond
Milk
Almond milk is a cooling drink for a warm day and
very easy to make.
Here's How:
1.Puree 2 lbs. of blanched almonds with 2
c. water in a blender
2.Pour the almonds into a saucepan
3.Simmer over a low heat
4.Add 2 lbs. sugar
5.Add 1 tbs. rose water
6.Stir until sugar is dissolved
7.Cool
8.Mix syrup with cold water to taste

taste

How to Make Cinnamon
Tea
For a different taste, try this delicious caffeine-free
"tea" that is very popular in Kuwait.
Difficulty Level: 2 Time Required: 25

Here's How:
1.In a saucepan, combine 4 c. of water
and 4 4-inch cinnamon sticks
2.Bring slowly to a boil
3.Keep at a low boil for 15-20 minutes
4.Remove the cinnamon sticks from the
water
5.Stir in 2 tsp. of sugar
6.When the sugar is dissolved, pour &
enjoy!
Tips:
1.Add more or less sugar to taste
2.This makes about four servings

How to make Ginger
Coffee
Yemeni ginger coffee is a real treat and easy to
make.
Difficulty Level: 4 Time Required: 20
mins.
Here's How:
1.Put 10 oz. of water into a saucepan.
2.Add 6 tsp. of powdered coffee.
3.Add 6 tsp. of sugar.
4.Add 2 tsp. of ground sugar.
5.Stir well.
6.Bring to a slow boil over a medium heat.
7.Remove from heat until boiling stops.
8.Bring again to a slow boil.
9.Repeat this process three times.
10.Pour into espresso-sized cups.
11.Enjoy!
Tips:
1.It is best to use only finely ground coffee
beans, although instant coffee can work
in a very desperate situation.

How to make
Lemon/Orange Juice
All around the eastern half of the Arab World,
people often serve this cooling blend of lemon
and orange juice for a refreshing treat.

Here's How:
1.Squeeze 6 oranges
2.Squeeze 3 lemons
3.Add 1 tbs. rose water
4.Add 1 c. water
5.Add sugar to taste
6.Mix well

How to make Moroccan
mint tea
All of the sudden, at least a dozen tea companies
are selling their version of Morocco's famous mint
tea. While these versions are inauthentic at best,
you can very easily make your own mint tea at
home.
Difficulty Level: 3 Time Required: 10

Here's How:
1.Boil about a quart of water.
2.Pour a few ounces of the boiling water
into your teapot and then discard that
water ("scalding the pot").
3.Put about 2 tablespoons of gunpowder
green tea in the empty teapot.
4.Pour about 6 ounces of water into the
teapot.
5.Allow the tea to steep for about 2
minutes.
6.Pour out the water and set it aside (it is
too bitter to drink).
7.Put several mint sprigs into the teapot.
8.Put several teaspoons (to taste) of sugar
into the pot.
9.Fill the teapot with boiling water.
10.Allow to steep for about 5 minutes.
11.Pour tea into glasses and enjoy.
Tips:
1.Pouring the tea from a good height above
the glass oxygenates the tea and
improves taste.
2.Make sure you entirely cover the tea and
the mint with the boiling water.
3.Use only fresh mint sprigs and do not use
mint leaves unless nothing else is
available.

How to make Rose Petal Tea
Before you throw those roses away, you can use
the petals to make a simple and delicious tea.
Difficulty Level: 2 Time Required: 10

Here's How:
1.Wash and clean about 2 c. fresh rose
petals
2.Pour 4 c. water into a saucepan
3.Boil water
4.Add rose petals
5.Allow to boil for about 5 min. or until the
rose petals become discolored
6.Pour into teacups

How to make Turkish
Coffee
It may be called Turkish Coffee, but the recipe
really originates in Yemen, in a city called Moka
(mocca).
Difficulty Level: 4 Time Required: 15
minutes
Here's How:
1.Get very well toasted coffee beans
2.Grind into a very fine powder
3.Put one cup of water per person into a
pot
4.Add 1 rounded tsp. of coffee per person
5.Add 1 rounded tsp. of sugar per person
6.Stir well
7.Bring slowly to a boil over a low heat
8.Before the froth overflows, remove the
pot from the fire
9.Divide the froth out between the cups
10.Bring to a boil again
11.Divide the liquid out
Tips:
1.In southern Yemen, some people add a
dash of cardamon powder
2.This coffee will be very sweet--consider
adding less sugar
