BLM Tuna Casserole

Yield: 4 servings
1/3 c green peppers, chopped
1/3 c onion, chopped
3 T shortening
1/4 c BLM
10 3/4 oz can condensed cream of mushroom soup
3/4 c milk
6 1/2 oz can water-packed tuna, drained
2 c frozen peas and carrots, thawed
1 T lemon juice
3/4 c cheddar cheese, shredded
Recipe
Preheat oven to 425 degrees.
Fry the green pepper and onions in the shortening until the
onion turns translucent. Turn the heat down to medium and
stir in 1/4 cup BLM. Slowly add the soup, stirring
constantly and heat to boiling.
Stir in tuna, peas and lemon juice. Pour into 11x3/4x7 1/2
inch baking dish. Place in oven while preparing biscuits.
