BREAKFAST FRITATTA FROM LEFTOVERS

Try a breakfast frittata... you can basically make it
up the night before and just pop it into the oven
first thing and it gets ready while you're getting
around then all you really have to do is add toast and
fruit for a total breakfast... and the variety is
endless... basically... brown up whatever meat you
have (bacon or sausage) ham doesn't have to be browned
really, Mix this with 1 or 2 eggs per person to be
eating, some hashbrowns or rice or bread cubes, about
a cup of milk, about a cup of shredded whatever cheese
and whatever leftover veggies you might have on
hand... we LOVE broccoli in this... salt and pepper to
taste.. (I've even added onions as well). Mix it all
up, put into a greased casserole pan. Cover and put
in the fridge overnight. In the morning, pop into the
oven and then turn it on, in about an hour, test with
a knife and if it comes out clean, breakfast is ready.

I like the fact that they are so versatile... you can
put about anything in them.. Leftover baked potatoes,
fried potatoes and onions, stale bread, the heels from
the ends of the loaf... even leftover cooked rice..
the combinations are endless.. Broccoli, cauliflower,
carrots.. whatever you have leftover. :)
