List of Ingredients
1 TB margarine or butter
1 cup cooked potato, diced
4 eggs, beaten
4 bacon slices, saut�ed and crumbled OR 1/2 cup leftover taco meat
4 (8 inch) flour tortillas
3/4 cup (3 oz.) shredded Cheddar cheese
1/2 cup Pace Picante Sauce or Thick & Chunky Salsa Recipe
In medium skillet over medium heat, heat margarine. Add potato and
saut�
until lightly browned. Add eggs and bacon and cook until eggs are set
but still
moist.
Warm tortillas according to package directions.
Spoon about 1/2 cup potato mixture down center of each tortilla. Top
with
cheese and picante sauce. Roll up and serve.
Makes: 4 servings.
