4 tablespoons chicken fat -- from frying chicken strips or
pieces
4 tablespoons flour
2 cups milk
salt and pepper -- to taste
Recipe
Leave 4 tablespoons fat in pan along with the crusty bits that stick
to the bottom. Heat until hot. Stir in flour until blended. Cook until
brown and bubbly, stirring constantly. Add milk; stir to mix well.
Continue cooking, stirring frequently, until gravy is thickened, about
5 minutes. Season with salt and pepper to taste. Makes about 2 cups.
If gravy is too thick, thin with a bit of milk. If too thin, add a
little flour mixed with a small amount of water.
