Hot Apple Pie French Toast

4 Granny Smith apples
1 teaspoon cinnamon
2 tablespoons flour
1 teaspoon lemon juice
3/4 cup sugar
4 eggs
1/4 cup milk
1/4 teaspoon grated nutmeg
1 teaspoon vanilla
6 slices sturdy day-old bread -- (1-inch thick)

Recipe
Peel and core apples. Cut into 1/4-inch cubes. Place in a pan with
enough
ater to cover. Bring to a boil, remove from heat and drain. Toss with
the
innamon, flour, lemon juice and 1/4 cup of the sugar. In a shallow
bowl,
eat eggs with the milk, remaining 1/2 cup sugar, nutmeg and vanilla.
With
serrated knife, cut a pocket in the bread starting at one side and
making
horizontal slit, leaving the other three sides intact. Fill pockets
with
he apple mixture. Dip into the egg mixture, coating both sides. Slowly
ook on a buttered griddle or in a buttered skillet until golden brown
on
oth sides. Dust with powdered sugar. Serve with maple syrup, if
desired.
