    1/2 cup pecans, lightly toasted
    1 1/3 cups flour
    2 T. sugar
    4 t. baking powder
    1/2 t. salt
    2 t. freshly grated orange peel
    1/4 cup unsalted butter, melted and cooled
    1 1/2 cups club soda
    Syrup:
    1 cup maple syrup
    1/4 cup orange juice

    Recipe



    In a blender or food processor, grind pecans with flour, sugar, baking
    powder and salt until fine. Transfer to a large bowl; stir in orange
    peel.
    In a small bowl, whisk together eggs and butter. Add to flour mixture.
    Stir
    in club soda. Bake waffles in preheated waffle iron. Heat maple syrup
    and
    orange juice in microwave or small pan. Pass hot syrup to drizzle over
    hot
    waffles. Serves 4
