    The Professor's Chocolate Cake

    6 ounces semisweet chocolate
    3/4 cup butter
    3/4 cup sugar
    3 eggs, separated
    1/3 cup flour
    3/4 cup filberts, chopped OR walnuts OR pecans
    1 tablespoon instant coffee
    powdered sugar, for garnish

    Recipe



    Preheat the oven to 350 degrees F.

    Butter and flour a 9-inch round cake pan, preferably one with removable
    sides.

    In a small saucepan, over low heat,melt the chocolate, butter and
    sugar. Set aside to cool.

    In a medium mixing bowl, beat the egg whites until stiff. Stir the egg
    yolks into the cooled chocolate mixture. Add the flour, nuts, and
    instant coffee. Fold in the egg whites. Pour into the baking pan and
    bake for 35 to 40 minutes. To garnish, dust with powdered sugar. Cut
    cake into wedges to serve. Makes 12 wedges.

    Note: The cake should be gooey inside.
