Zest of 2 lemons, cut into fine julienne strips
1 cup water
1/2 cup sugar
Recipe
In a shallow pan or skillet, heat water and sugar. Swirl pan to
dissolve
sugar. Increase heat and bring to boil. Add julienne strips of zest
(only
the yellow part, NOT the white. If you use the white, it will make the
candied lemon rind bitter). Cook until rind is shiny and somewhat
transparent. Remove with slotted spoon to wax paper. Separate pieces
with a
fork.
