1 medium potato, baked
1 to 1 1/2 c. powdered sugar
1/4 lb. paraffin wax
1 lb. pkg. semi-sweet
chocolate chips
Recipe
Bake in oven (not microwave) and peel the potato.
Place
potato in large mixing bowl and whip with beater.
Gradually
add powdered sugar to potato. The potato and
powdered sugar
will have a chemical reaction and will melt to form a
soft
dough. Add peppermint flavoring to taste. Place dough
on a
wax paper with a little sifted powdered sugar and roll
into a
1/8 to 1/4-inch thickness. Cut into small circles about
1-inch
in diameter. Refrigerate. Melt 1/4 pound paraffin and
choco-
late chips in double boiler. Dip each individual patty in
chocolate mixture and coat well. Place on wax paper
until
firm. Store in covered sealed container.
Note: Peppermint flavoring will evaporate as you work
your dough, so have it a little strong from the
beginning. Do
not store with other items as they will pick up the
taste of
the peppermint. If you have any coating mixture left
you may
store it in a tightly sealed container and freeze it for a
long
period of time. Peppermint flavoring can be purchased
at most
hobby shops or some druggist will order it for you.
