    3 TB mashed potatoes
    3 c powdered sugar
    1-1/2 c creamy peanut butter

    Recipe



    Stir mashed potatoes into powdered sugar; mix well and add a little
    more
    potato as needed to make a dough the consistency of pie crust. Roll
    out
    into 1/8” thick rectangle on a board coated w/powdered sugar. Spread
    evenly
    with peanut butter. Roll tightly along the longer side of the
    rectangle,
    jellyroll style. Wrap in plastic wrap; refrigerate at least 2 hrs.
    Slice
    1/2” thick. Store in airtight container. Makes about 2 dozen.
