Creamed Chicken & Biscuits

4 C. chopped, cooked chicken
1/2 large onion, chopped
1 1/2 tsp. butter
1 (10 3/4 oz.) can cream of chicken soup
1 C. sour cream
1/2 C. milk
1/2 C. chopped pimiento (optional)
1 C. shredded Cheddar cheese, divided
1 pkg. of 6 frozen biscuits, thawed
Recipe
Preheat oven to 350 degrees F.
Grease bottom & sides of an 11 X 7 baking dish. Heat butter in a small
skillet over medium-high heat until melted. Stir in onion and sauté
until tender. Combine onion, chicken, soup, sour cream, milk and
pimiento in a medium bowl and mix well. Spoon mixture into prepared
dish. Bake for 15 minutes. Remove from oven and sprinkle top with 3/4
C.
of the Cheddar cheese. Arrange biscuits in single layer over top and
sprinkle with remaining cheese. Bake until biscuits are golden brown
and
sauce is bubbly, about 20 minutes longer. Serves 6.
