POTATO TOPPED BEEF

List of Ingredients
2 lbs. ground beef (lamb, chiken or turkey)
1 med. onion, chopped
2 cans (14 1/2 oz. ea.) diced
tomatoes, undrained
1 c. frozen peas
1 can corn (or mixed veggies) - drained
2/3 c. ketchup
1/4 c. chopped fresh parsley
2 T. all purpose flour
2 t. beef bouillon granules
2 t. dried marjoram
1 t. salt
1/2 t. pepper
6 c. hot mashed potatoes (prepared
with milk and butter)
2 eggs
Recipe
In a saucepan, cook beef and onion over
medium heat until meat is browned; drain.
Add next nine ingredients; mix well.
Bring to a boil; cook and stir for 2 min.
Pour into an ungreased shallow 3 qt. baking dish.
Combine potatoes and eggs; mix well. Drop by 1/2 cupfuls onto beef mixture.
Bake, uncovered, at 350° for 35 to 40 min. or until bubbly and potatoes are lightly browned.
