Tuna and Potato Casserole

2 potatoes medium (about 3/4 lb.)
1 (6-1/2-ounce) can tuna drained and flaked
1 (10-ounce) package mixed vegetables frozen
8 ounces cheddar cheese shredded (about 2 cups)
1 (10-1/2-ounce) can cream of mushroom soup or condensed cream of
chicken soup
1/2 cup milk
2 tablespoons onion minced

Recipe
Preheat oven to 350°. Generously butter a deep 2-quart baking dish.
Peel and dice potatoes. Place half of the potatoes in baking dish. Layer
with tuna, then frozen vegetables and cheese. Top with remaining
potatoes. In a small bowl, stir soup, milk and onion until blended. Pour over
potatoes. Bake, uncovered, for 1 hour or until potatoes are tender and
sauce is bubbly around edges. Sprinkle with paprika.
