Pepper Steak

In skillet, heat 2 T. oil, 1 t. salt and 1 large clove garlic, minced
fine.
When garlic turns golden, add 1 lb. beef, sliced think in 1/8 x 1/2"
slices
(use flank, chuck, or sirloin). Cook and stir 2 to 3 minutes until beef
begins to brown. Add 1 t. sugar, 1 t. sherry, and 1/2 cup chicken broth
and
a dash pepper. Cook 2 minutes. Add 1 large green pepper, cut in 12
pieces
and 1 onion, about 2 oz, cut in 8ths. Stir, then simmer covered 3
minutes.
Stir 2 T. cornstarch, 1 T. thick soy sauce and 1/2 cup water, then add
to
skillet. Cook until mixture thickens, about 2 minutes. If you prefer
the
green pepper softer to the bite, drop the pieces into boiling water 2
to 3
minutes, drain and then proceed with directions.
