Ground Beef Chili

List of Ingredients
1 pound ground beef
1 onion, diced
2 cloves garlic, diced
1 Tbs chili powder
1 tsp oregano
3/4 tsp ground cumin
1 15 oz can pureed or diced tomatoes, undrained
1 15 oz can kidney beans, drained
salt and pepper to taste
water if necessary
Condiments:
sour cream
grated cheddar cheese
chopped green onions
salsa
Brown the ground beef with the onion and garlic and then drain off any
fat. Add the chili powder, oregano, and cumin. Stir and cook another
minute, then add the tomatoes and their juice. Simmer on low uncovered
for 10 minutes. Add the kidney beans and simmer another 15 minutes,
uncovered, stirring periodically. If it gets to dry at any point, add some
water. Season with salt, pepper, Tabasco if you'd like, etc.
Serve over rice (see recipe below), corn bread (see recipe below), or a
baked potato.
Rice
It has come to my attention that some people have trouble getting rice
to turn out nicely. So here's a recipe.
Two parts water to one part rice plus a bit of salt and butter if you
want. So for example:
1 cup rice
2 cups water
1/2 tsp salt
1 tsp butter if you want (I frequently leave it out)
I used to bring the water to a boil and then add the rice, but I read
that wasn't necessary and haven't done it in years. That way I can
lazily use the same measuring cup for the rice (when it's dry) and then the
water. Bring it to a boil and then turn it as low as you can while
still getting a slow simmer, stir it, cover it, and cook for 20-25 minutes.
Don't stir it or take the cover off during this time. When the bell
rings, turn the stove off, stir up the rice, and cover it again until
you're ready to serve. It will keep warm for quite a while.
I've also learned a new way that works even easier, although you may be
throwing out what little nutrients there are in white rice if you do it
this way. Basically, cook it like pasta. Bring a larger pot of water to
boil, add the rice, stir, and then cook until done. Drain the rice.
Corn Bread
1 cup cornmeal
1 cup flour (can be part whole wheat)
4 tsp. baking powder
1/2 tsp. salt
2 Tbsp. brown sugar
1/2 cup dry milk (optional)
2 eggs
1 cup milk
1/4 cup oil or melted shortening or margarine or bacon grease
Preheat oven to 400.
Mix together cornmeal, flour, baking powder, salt, brown sugar, and dry
milk. In a small bowl or measuring pitcher, mix together eggs, milk,
and melted shortening. Add the wet ingredients to the dry and stir just
until moistened.
Pour into a greased 9x9 pan and bake 25 minutes.
Options: Pour into muffin tins instead.
Can also be made with buttermilk but reduce baking powder to 2 tsp. and
add 1 tsp. baking soda.
