GINGER REFRIGERATOR COOKIES

1 c. shortening
1 c. sugar
2 eggs
1/2 cups black molasses (briar rabbit is best brand for health)
4 1/4 cups flour
3 tsp. ginger
1 tsp. soda
1 tsp. salt
Recipe
Cream shortening. Add sugar gradually. Cream well.
Blend in well beaten eggs and molasses. Sift flour, ginger,
soda and salt together and stir gradually into creamed mixture.
Mold into a loaf. Roll or wrap in waxed paper and place in
refrigerator to chill for several hours. Slice 1/8-inch thick
(using sharp knife). (Dough may be kept in refrigerator, used
as desired.) Place on ungreased baking sheet. Bake 8 to 12
minutes, depending on thickness of cookies and of baking sheet,
in moderately hot oven at 400 degrees. Makes about 10 dozen cookies,
2 1/4-inches in diameter.
