1 cup sifted flour
1/4 cup sugar - optional
4 tsp. baking powder
3/4 tsp. salt
1 cup yellow cornmeal
2 eggs
1 cup milk
1/4 cup shorteningRecipe
Sift together flour, sugar, baking powder and salt. Stir in the
cornmeal. Add eggs, milk and shortening. Beat with rotary or electric
beater until just smooth, about 1 min. Do not over beat. Pour batter
into greased 9 x 9 x 2 inch pan. Bake at 425 degrees for 20 to 25 mins.
Spread with butter and honey 5 mins before baking is completed.
