Cheesecake Bars

1 1/2 cups graham cracker crumbs (about 26 crackers)
6 ounces butterscotch chips
5 tablespoons butter
8 ounces cream cheese, cut in 6 pieces
1/4 cup sugar
2 eggs
2 tablespoons flour
1 tablespoon lemon juice
Recipe
Preheat oven to 350 degrees F.
In food processor bowl, using knife blade, crush graham crackers.
In 1-quart saucepan, combine butterscotch chips and butter and melt
over low heat. Remove from heat. Stir in crumbs. Set aside 1/2 cup of
the mixture. Press remaining mixture into ungreased 8-inch baking pan.
Bake 10 minutes.
Position knife blade in food processor bowl and add remaining
ingredients. Process until smooth about 10 seconds. Spread over hot,
baked crust. Sprinkle reserved crumb mixture over top. Return to oven
and bake 20 to 25 minutes.Cool and cut into squares. Store in
refrigerator. Makes 16 squares.
