List of Ingredients
2 pounds lean beef -- I used a rump roast
2 tablespoons water
1/8 teaspoon allspice
1/8 teaspoon ground cloves
dash nutmeg
2 teaspoons soft butter
salt and pepper -- to taste
clarified butter (ghee)
Recipe
Trim fat from meat and cube. Place the beef cubes in a small
casserole, add water, and the spices. Cover the casserole dish and
place in a larger pot or roasting pan that is at least 3 inches deep.
Place the casserole within the roasting pan and add boiling water up
to the level of the meat. Bake at 325 degrees F for 3 hours and 15
minutes. As it bakes, add more boiling water to the water pan and
check to see if the meat needs a few more tablespoons water to prevent
sticking.
Remove and cool the meat. Process cooked meat cubes in the food
processor, adding a bit of beef juices, and soft butter to make a beef
spread. Season to taste with salt and pepper. Press into small jars,
pour a 1/4-inch thick layer of ghee a top each jar of spread; and refrigerate
for up to 1 month. As long as the seal is not broken, the beef spread
should keep 1 month refrigerated.
