Baked Sour Cream Doughnuts

3 large eggs
1 cup sugar
1 cup sour cream
1 teaspoon baking soda
3 1/4 cups flour, plus extra for rolling out
1 teaspoon nutmeg
pinch salt, optional
vegetable oil for frying or baking
powdered sugar, optional
Recipe
Whisk together the eggs and sugar in a large bowl. In another bowl, mix
the
sour cream with the baking soda and stir into the egg mixture. In a
small
bowl, sift together the flour, nutmeg, and salt, if desired. Gradually
stir
in the flour mixture into the sour cream mixture. Mix thoroughly and
cover
with plastic wrap. Refrigerate at least 3 h ours or overnight.
Let the dough return to room temperature and turn out onto floured
surface.
Roll dough out to a 1/2-inch thickness. Cut out rings with doughnut
cutter.
Place the doughnuts with their holes on a floured towel and cover with
another towel. Let rest 15 minutes.
To fry the doughnuts, fill a deep pan no more than halfway with oil, at
least 2-inches and bring in slowly to 375 degrees F, then fry the
doughnuts
until golden brown This should take about 3 minutes total. Doughnuts
(as
well as most other fried foods will float when done). Sprinkle with
powdered
sugar, if desired.
To Bake: Preheat oven to 375 degrees F. Place the doughnuts and their
holes
1-inch apart on a greased baking sheet. Brush with oil and bake 20 to
30
minutes until golden brown. Remove to cooling rack and sprinkle with
powdered sugar, if desired.
Makes about 2 dozen doughnuts.
