    2 cakes yeast or 2 pkg. dry
    2 c. milk
    1/2 c. vegetable shortening
    2 tsp. salt
    1/2 c. sugar
    2 eggs
    7 c. flour (may need a little
    more)
    shortening (for deep frying in
    electric skillet)

    Recipe



    Heat milk slightly. Dissolve yeast in 1/4 cup warm
    water. Add to milk; add 3 cups flour (1 at a time, beating
    smooth after each cup). Cover with a warm wet towel. Let
    rise
    in warm place until double in bulk (2 hours). Cream shorten-

    ing, salt and sugar; add eggs and blend. Stir this mixture
    into yeast sponge. Add remaining flour and beat well for
    about
    5 minutes. Then, may need to knead in 1 or 2 cups more
    flour.
    Rub top with vegetable oil and let rise again until double
    in
    bulk. Punch down and shape into a ball. Roll out on floured
    counter about 1/2-inch thick. Cut with floured doughnut
    cutter. Allow to rise about 45 minutes, then fry in deep
    shortening heated to 380 degrees to 400 degrees until brown,

    about 3 minutes.
    Turn over and brown. Drain on absorbent paper. Glaze
    with powdered sugar mixture.

    Glaze:
    1 lb. powdered sugar
    3 tsp. cinnamon
    1/4 tsp. vanilla (optional)
    milk (enough to make a medium
    glaze)
    Let drain on rack. Makes 27 doughnuts, sometimes more.
    One can makea cutter out of Number 2 Del Monte tin can,
    removed the rim and used the center out of regular doughnut
    cutter. Makes a larger doughnut.
