*Pink Salmon Patties

For 4 Servings:
7 ounces canned pink salmon
1-1/2 cups cooked potatoes, mashed
1 egg, lightly beaten
1 onion, finely chopped
1/3 cup plus 3 Tbs. corn kernels, canned and drained, or fresh
1/2 tsp. lemon zest
1/8 tsp. flour
1/8 tsp. oil
Recipe
Mix salmon and its liquid (if desired) with mashed potatoes, egg,
onion, corn, and zest. Shape into 12 patties. Coat patties with plain flour
and fry in hot oil until golden brown, turning as needed. Drain on
paper towels and serve hot. This recipe serves 4 people. Due to the nature
of this recipe, it adjusts the number of servings in multiples of 4
only.
