3 broiler-fryer chickens (21/2 to 3 pounds -- cut
up
each)
1 sprig parsley
1 celery stalk with leaves -- cut up
1 carrot -- sliced
1 small onion -- sliced
1 tablespoon salt
1/2 teaspoon pepper
Recipe
Place all ingredients (with giblets) in large
kettle. Add enough water to cover (about 3
quarts). Heat until water boils. Reduce heat;
cover tightly and simmer until done, about
45 minutes.
Remove meat from broth. Cool quickly. Place
pieces of 1 chicken in 2-quart freezer container;
refrigerate. Remove skin and meat from re-
maining chickens. Cut meat into pieces (about
6 cups); refrigerate. Strain broth.
