    Baked Spicy Beef Chimichangas

    1 lb. ground beef
    1 medium onion, chopped
    2 garlic cloves, minced
    8 oz. mexican 4 cheese blend, divided
    1 can refried beans
    1 4.5 oz can chopped green chiles, drained
    1/2 c. picante sauce
    12 (8 inch) flour tortillas

    Recipe



    Cook first 3 ingredients in until beef is no longer pink. Drain Stir
    in 1 1/2 cups cheese, refried beans, chiles, and picante sauce. Place
    1/4 cup mixture just below center of each tortilla. Fold opposite
    sides of tortillas over filling, forming rectangles. Secure with
    toothpicks.

    Place on a baking sheet and coat chimichangas with cooking spray.
    Bake at 425F for 8 minutes; turn chimichangas over and bake 5 minutes
    more. Remove picks and serve immediately with remaining 1/2 cup
    cheese and other toppings (sour cream, salsa, guacamole, etc)
