1 cup butter room temperature
1/2 cup sugar
1 egg slightly beaten
2 1/2 cups flour
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon water if needed
In a medium bowl, or food processor fitted with metal blade, mix
butter, sugar, egg, flour, vanilla and salt until a smooth, pliable
cookie dough forms. If mixtgure seems dry, work in 1 to 2 teaspoons
water. Gather dough into a ball; knead slightly.
Wrap dough in plastic wrap and refrigerate 30 minutes or until ready
to use. Dough can be stored up to 1 week.

1 Butter Cookie Dough recipe
1/2 teaspoon almond extract
Preheat oven to 375 degrees F.
When preparing Butter Cookie Dough add almond extract along with
vanilla.
Refrigerate dough 30 minutes.
Divide dough into fourths.
On a lightly floured board, roll 1 piece of dough to a rectangle,
1/8-inch thick.
Arrange 12 sandbakelser tins colose together. Carefully lift dough and
place over tins, letting dough drape into tins.
Roll a rolling pin across tops of tins to cut dogh.
Dip fingers into flour, then press dough evenly into tins.
Bake 12 to 15 minutes or until light brown. Cool on a rack. Serve
open-side down. Makes about 48 cookies.

1 Butter Cookie Dough recipe
1/2 cup raspberry jam seedless preferred
1/2 cup powdered sugar
2 tablespoons milk
Preheat oven to 375 degrees F.
Divide cookie dough into fourths. Rolling each between your hands and
a lightly floured surface, shape into ropes, about 1/2-inch thick.
Place ropes on ungreased baking sheet about 2 inches apart. With side
of your little finger, press a long groove down length of each strand.
Bake 10 minutes.
Spoon jam or jelly into a grooves. Bake 5 to 10 minutes longer or
until edges are slightly brown.
In a small bowl, beat powdered sugar and milk to make a glaze. Brush
or drizzle glaze over hot cookies. Cut logs diagonally into 1-inch
slices. Makes about 96 cookies.
ALMOND BUTTER CRISPS

2 2/3 cups blanched almonds (about 3/4 pound)
1/2 cup sugar
1/4 teaspoon salt
1 1/2 teaspoons almond extract
1/2 prepared Basic Butter Cookie Dough at room
temperature
2 egg whites -- beaten lightly
Halve 1 cup almonds and reserve.
In a food processor grind almonds with sugar and salt until fine. In
bowl of a standing electric mixer beat almond mixture and almond
extract into basic dough until just combined well. Pat dough into a
rectangle. Chill dough, wrapped in wax paper, at least 1 hour or
overnight.
Preheat oven to 350°F.
Working with one third of dough at a time, roll out each piece of
dough between two sheet of wax paper into a 12- by 9-inch rectangle,
slightly more than 1/8-inch thick. Cut dough into 1 1/2- to 2-inch
almond shapes (or any other shape preferred), arranging cookies about
1/2 inch apart of baking sheets. If dough becomes too soft to work
with, freeze or chill uncut dough on baking sheet until firm.
Brush cookies lightly with egg whites and gently press a reserved
almond half in center of each cookie.
Bake cookies in batches in middle of oven until pale golden, about 10
minutes, and cool on racks. Cookies may be stored between layers of
wax paper in airtight containers up to 6 weeks frozen.
Makes about 11 dozen cookies.
